In 2009 Barry Stein and Barry Berstein founded the first micro distillery in Canada. Still Waters Distillery near Toronto offers gin, rye, and vodka, but the focus has been on single-malt whisky.
Tasting Notes for Stalk & Barrel Single Malt
Stalk & Barrel uses two-row barley sourced locally, distilled in Copper Pot Stills, and matured in ex-bourbon barrels. A non-chilled filtered whisky with no caramel coloring and bottled at 46% ABV. There is no age statement on the label, but presumably aged 3-4 years.
Nose: Fresh grass, cereal, and honey aromas. A light and refreshing nose remind me of Irish Whiskey. The honey aroma becomes more present as you let the whisky breathe in the glass.
Palate: Sweet arrival of vanilla, developing into spicy flavors of pepper and oak. The malt has a thin texture and feels young due to its sting of alcohol heat. The flavors remind me of Teeling Whiskey with the freshness and sweet and grassy flavors.
Finish: Short and spicy finish with plenty of oak.
Conclusion: The whisky feels young on the palate due to a good dose of alcohol heat. One can enjoy it with a cube of ice in the summer. However, the whisky needs more time in the barrel to reach its full potential. My main concern with Stalk & Barrel is the price tag of $80. One can find single malts for that price that deliver a better experience, for example: Glendalough, The Balvenie Double Wood Scotch Single Malt, and Old Pulteney 12 Years Old Single Malt.
